Cook's 3-Cheese Mediterranean Chicken Fusilli

Cook’s Flavor Origins Mediterranean Roast

Ingredients

Mediterranean Roast:

  • 1 Cook’s Mediterranean Roast (quarter leg)
  • 1 Tbsp Olive oil

Pasta:

  • 1L Water
  • 2 Tbsp Olive oil
  • 1 Tbsp Salt
  • 2 Tbsp Pasta (fusilli)

Dried Tomatoes:

  • 2 Tbsp Olive oil
  • ½ Tbsp Butter
  • 4 Tbsp Tomatoes (sun dried)
  • 3 Tbsp Feta cheese
  • Salt (to taste)
  • Pepper (to taste)

Toppers:

  • ½ cup Mozzarella cheese
  • ½ Parmesan cheese
  • Parsley (for garnish)

Instructions

For Cook’s Mediterranean Roast:

  1. Coat Cook’s Mediterranean Roast with olive oil.
  2. Grill each side for 6 minutes before placing it in a preheated oven at 450F for 10 minutes, or until internal temp reaches 165F.

For Pasta:

  1. Boil until cooked Set aside.
  2. Saute the sun dried tomatoes in a heated pan with butter.
  3. Remove from heat, and add olive oil and feta cheese.
  4. Toss in pasta and mix well. Adjust taste with salt and pepper.

For plating:

  1. Top with mozzarella and parmesan cheese, then place it in the oven until melted.
  2. Add your Mediterranean Roast and garnish with parsley.
